Job Overview

The Food Service Operations Manager/Sous Chef is responsible for statewide food service operations support, janitorial supply management, and HR360 catering events as needed. Controls the janitorial and food supply ordering process at all HealthRIGHT 360 facilities statewide. Provides facility meal shift coverage as needed. Multi-tasking, troubleshooting, and finding resolutions to complex food services issues are a primary responsibility in this position. 

Key Responsibilities

Managerial Responsibilities: Responsible for direct supervision and control of ordering food and janitorial supplies.  Oversees food operations needs, working with all programs for special needs and safety measures. Ensures HR360 stays in compliance with all federal, state and local regulations, as well as program requirements.

Provides program and operational support and conducts a hands-on approach for resolving problems. This position oversees Food Service operations statewide, operating and supporting facility kitchens and operations statewide. Will need to travel at will for emergency needs and to support operations.

Provides direct supervision and mentoring of subordinate staff. Managerial activities may include but are not limited to, hiring, training, motivating, evaluating, disciplining, and terminating. 

Oversight Responsibilities: Oversees all aspects of Food Services and janitorial operations. Travels to various statewide HR360 facilities regularly as needed from Executive Chef.  Ensures that subordinate staff and clients are familiar with agency and departmental policies, procedures, practices and activities, as well as state and local food preparation regulations. Develops production menus for mealtimes. Advises staff and clients of possible improvements in efficiency, productivity, etc.

Operating/Compliance Responsibilities: Handles government surplus ordering and shops at food bank. Orders and maintains adequate supplies of food and janitorial products within limits of a set budget. Supports production menu development and posts weekly menus. Ensures that meals are well balanced, nutritious and appealing. Participates in food preparation and cooking as necessary.  Manages food storage, ensuring proper refrigeration and inventory control at all sites statewide. Ensures quality control, cleanliness, and sanitation in accordance with state health and safety codes. Maintains compliance with state licensing criteria and health and safety codes. Maintains professional safety standards. Ensures servicing, repair, and transportation of foods for events as needed.

Administrative Responsibilities: Operates within and maintains all set budgets. Establishes and maintains good relationships with suppliers/vendors. Develops and implements cost-effective event planning and HR360 food service policies and procedures.  Participates in department, purchasing and other meetings. 

Education and Knowledge, Skills and Abilities

  • 8 or more years with back off the house hands on cooking skills culinary school or culinary training bonus not require must have a sensitive level and compassion with challenged population and trouble shooting solutions can travel and drive as needed delivering shift coverage as needed.
